Ingredients
- Canned peeled tomatoes800 g
- Red onion1 pc
- Garlic3 cloves
- Olive oil2 tbsp
- Basil6 g
- Vegetable stock400 ml
- Sugar0.5 tsp
- Salt1 pinch
- Pepper1 pinch

Finely chop onion and garlic.

Heat olive oil in a pot over medium heat. Sauté onion for 5 minutes until softened.

Add garlic and sauté 1 minute until fragrant.
Tip: Do not burn garlic or it will turn bitter.

Add canned tomatoes (with juice), vegetable stock and basil. Stir and bring to a boil.

Reduce heat and simmer 15 minutes covered, stirring occasionally.

Remove basil stems. Blend the soup until smooth and creamy - use a stick blender, or blend in batches filling the jug only halfway (hot liquid expands). Add sugar, salt and pepper to taste.
Tip: A little sugar balances the acidity of tomatoes.
Cooking methods
On the stove
Medium heavy-bottomed pot. Sauté onions on medium, reduce to low for the 15-minute simmer. Gas allows easy flame adjustment. Keep the lid slightly ajar to release steam and concentrate the tomato flavor.
On induction
Level 5–6 for sautéing, reduce to level 2–3 for simmering. After blending, reheat gently at level 2. Induction maintains a steady low simmer without scorching - ideal for tomato-based soups that can stick to the bottom.
Over an open fire
Works well over a low campfire or ash-covered coals. Bring to a boil over the fire, then move the pot to the edge of the coals for the 15-minute simmer. The faint smokiness pairs surprisingly well with the tomato flavor.
