Reducing
A sauce cooks uncovered until water leaves and the flavour thickens.
What to do
- Keep the sauce at a gentle boil, lid off.
- Cook until it coats a spoon in a thin layer.
- Salt at the end. Evaporation makes it saltier.
A common slip. High heat at the end burns the sugars and leaves a bitter edge.
