Reduce heat to low. Gently stir with a spatula until eggs set - about 3 minutes. Do not overcook.
Tip: Stop cooking slightly before you think they are done - residual heat will finish them.
Cooking methods
On the stove
Use a small non-stick pan on medium-low heat. Gas gives quick flame reduction when eggs start to set - crucial for soft, creamy eggs. The pan should feel warm, not hot, when you add the egg mixture.
On induction
Induction excels here. Set to level 3–4 for gentle, precise heat. The rapid response prevents overcooking - switch off 30 seconds before done; residual heat finishes perfectly. Never go above level 5 for scrambled eggs.
Over an open fire
Use a small cast iron pan over dying embers or ash-covered coals - not open flame. The gentle diffuse heat of coals is ideal for soft eggs. Move the pan immediately off heat as soon as the eggs begin to set.
