Ingredients
- Salmon fillets (skin-on)4 pcs
- Broccoli300 g
- Cherry tomatoes200 g
- Potatoes400 g
- Olive oil4 tbsp
- Lemon1 pc
- Garlic3 cloves
- Rosemary, thyme6 g
- Salt1 pinch
- Pepper1 pinch

Preheat oven to 200°C. Cut potatoes into 1.5 cm cubes (no need to peel). Cut broccoli into small florets. Halve the cherry tomatoes. Mince garlic.

On a large baking sheet, toss potatoes with 2 tablespoons olive oil, salt, pepper and minced garlic. Spread in a single layer.
Tip: Do not crowd the pan. Vegetables need space to roast, not steam. Use two trays if needed.

Bake potatoes for 15 minutes until they start to soften and get some color.

Remove tray from oven. Push potatoes to the sides. Add broccoli and cherry tomatoes. Place salmon fillets skin-side down in the center. Drizzle everything with remaining oil. Squeeze lemon juice over salmon. Add herb sprigs. Season with salt and pepper.

Return to oven and bake 15 minutes until salmon flakes easily with a fork and vegetables are tender.
Tip: Salmon is done when it turns opaque and flakes apart when you press it gently with a fork.

Serve directly from the tray. Squeeze remaining lemon over the top.
Cooking methods
On the stove
Stovetop is only used if searing salmon before oven. The main cooking happens in the oven at 200°C for 15 minutes per batch. For the best result, use the oven exclusively.
On induction
No induction needed - this is an oven recipe. Preheat to 200°C. If you want to sear salmon first, use level 8 on cast iron for 2 minutes skin-side down before transferring to the oven.
Over an open fire
Wrap salmon and vegetables in foil packets with oil and lemon. Place on medium coals for 15–20 minutes. Individual packets make serving easy. The smoky flavor is outstanding with salmon.
