Ingredients

Instructions

    Bring a large pot of water to boil. When boiling, salt and add pasta. Cook according to package directions (usually 8-10 minutes).

    Tip: Use at least 1 liter water per 100g pasta. Reserve a cup of pasta water before draining.

    While pasta cooks, slice garlic into thin slivers. Chop the parsley.

    In a large pan over medium heat, warm the olive oil. Add garlic and chili. Sauté 2 minutes until garlic is golden - do not burn it.

    Tip: Golden means pale gold - brown garlic turns bitter. If it colors too fast, lift the pan off the heat for a moment.

    Drain pasta, reserving about 200 ml (a cup) of the cooking water. Add pasta to the pan with garlic.

    Add some pasta water and parsley. Toss vigorously for 1-2 minutes to emulsify the sauce.

    Tip: Starch from pasta water helps the sauce cling beautifully to the pasta.
