Ingredients

  • Ripe bananas2 pcs
  • Eggs2 pcs
  • All-purpose flour120 g
  • Milk80 ml
  • Baking powder1 tsp
  • Vanilla extract0.5 tsp
  • Salt1 pinch
  • Butter15 g

Instructions

  1. 1

Mash bananas with a fork in a bowl until smooth.

Tip: The riper the bananas (with spots), the sweeter the pancakes will be.

  2. 2

Add eggs and mix well. Then add milk and vanilla.

  3. 3

Sift flour, baking powder and salt. Fold into banana mixture and gently mix - not too much or they will become tough.

  4. 4

Let the batter rest 5 minutes for baking powder to activate.

  5. 5

Heat a pan over medium heat and grease with butter. Pour about half a ladle per pancake.

  6. 6

Cook 2-3 minutes until bubbles appear on the surface. Flip and cook 1-2 minutes more.

Tip: Do not press down on pancakes - they will lose fluffiness.

Cooking methods

On the stove

Use a non-stick pan on medium heat. Gas allows quick adjustments between batches. This thick batter needs 2–3 minutes per side. Test with one pancake first and adjust heat before cooking the rest.

On induction

Set power level to 5–6. Preheat 2 minutes. Induction gives even heat distribution across the pan base, producing consistent golden color. Reduce one level between batches as the pan retains heat well.

Over an open fire

Cast iron pan works best on open fire. Position over medium embers. The thick batter needs moderate, steady heat. If the bottom browns before bubbles appear on top, move the pan further from the fire.
