Ingredients
- All-purpose flour200 g
- Eggs2 pcs
- Egg yolks4 pcs
- Milk400 ml
- Sunflower oil30 ml
- Salt1 pinch
- Walnuts150 g
- Sugar160 g
- White wine200 ml
- Vanilla sugar8 g
- Butter20 g
Instructions

Whisk flour, the 2 whole eggs, milk, a pinch of salt and 20 g sugar into a thin batter. Rest 10 minutes.

Grind or finely chop the walnuts and mix them with 60 g sugar and the vanilla sugar.

Butter a pan and fry thin pancakes, about 1 minute per side, until they spot gold. Stack them under a cloth.
Tip: The first pancake is the tester. If it tears, the pan is not hot enough or needs more butter.

Spread each pancake with walnuts, roll, and keep warm.

For the sabayon, set a bowl over barely simmering water. Whisk the 4 yolks with the remaining 80 g sugar and the wine 8 minutes until the foam is thick and holds a ribbon.
Tip: Steam, not a boil. If you see scrambled flecks, pull the bowl off and whisk like you mean it over a cooler pot.

The bowl must not touch the water and the water must not boil hard or the yolks scramble.

Plate two rolls per person and pour the foam over them at the table.

Serve at once. The foam falls if it waits.

On the stove
Fry pancakes in a wide pan on medium gas. Cook the wine foam in a bowl over a pot of barely shivering water on the lowest flame that still makes steam.
On induction
Warm milk or butter on level 2. Custards and sabayon on 3 with constant stirring. Bakes stay in the oven - an induction hob does not replace it.
Over an open fire
Pancakes fry in a skillet over medium embers. The sabayon needs a pot of hot water at the fire’s edge - not over the hottest coals or the yolks scramble.
