Ingredients
- Honey200 g
- All-purpose flour400 g
- Eggs1 pc
- Butter50 g

Heat the oven to 180°C.

Warm the honey and butter in a small pan until the butter melts. Cool until you can touch the side of the pan.
Tip: Boiling honey cooks the egg when you add it. Warm is enough - you should be able to hold a finger near the pan.

Stir in the egg, then the flour, baking soda, cinnamon, ground cloves, nutmeg and a full teaspoon of freshly ground black pepper with a pinch of salt.

Knead briefly into a firm dough. If it sticks, dust with a spoon of flour - do not knead it tough.

Roll 5 mm thick on a floured board. Cut diamonds or rounds and lay them on a buttered tray with space between.

Bake 14 minutes until the edges are firm and the tops look dry, not wet.
Tip: They look pale at 14 minutes and that is right. Extra time turns them into tiles.

Cool on the tray 5 minutes, then on a rack. They harden as they cool - do not judge them hot.
Cooking methods
On the stove
Dough and fillings are mixed on the board or in a pan on the lowest gas flame. The bake is a middle-rack oven. If the top browns early, tent with foil.
On induction
Warm milk or butter on level 2. Custards and sabayon on 3 with constant stirring. Bakes stay in the oven - an induction hob does not replace it.
Over an open fire
You can let the dough rise and cook fillings near the fire. The bake needs an oven or a Dutch oven with coals on the lid; open flame burns thin pastry and cookies.
