Ingredients

  • Beef shank slices (ossobuco)4 kom
  • All-purpose flour50 g
  • Butter40 g
  • Olive oil2 žlice
  • Onion1 kom
  • Carrot1 kom
  • Celery1 kom
  • Dry white wine200 ml
  • Stock500 ml
  • Lemon1 kom
  • Parsley20 g
  • Garlic1 čehova

Instructions

    Snip the membrane around each shank in a few places so it does not curl, season with salt and pepper and dredge lightly in flour, shaking off the excess.

    Heat the butter and olive oil in a wide, heavy pot and brown the shanks well, about 4 minutes per side, then set them aside.

    In the same pot, soften the finely chopped onion, carrot and celery over medium-low heat for 8 minutes, scraping up the browned bits.
