Ingredients
- All-purpose flour400 g
- Eggs3 pcs
- Sunflower oil2 tbsp
- Warm water120 ml
- Salt1 tsp
- Cottage cheese500 g
- Sour cream200 g
- Breadcrumbs60 g
- Butter50 g
Instructions

Mix flour, 1 egg, the oil, warm water and a pinch of salt into a firm dough. Knead 6 minutes until smooth.

Cover and rest 30 minutes. Mix the cottage cheese with sour cream, the remaining 2 eggs and a pinch of salt.

Roll the dough thin. Cut 10 cm squares. Spoon filling in the center of each, fold into a pillow and pinch every edge shut.
Tip: A leaky pinch dumps the filling into the water. Walk the edges twice with dry fingers.

Bring a wide pot of salted water to a lazy simmer.

Slip in the pillows. Cook 10 minutes after they float. Lift with a slotted spoon.
Tip: A hard boil tears the pillows. Count the bubbles - they should be lazy.

Brown the breadcrumbs in the butter until they smell toasted.

Arrange the štrukli on a warm platter and pour the crumbs over them.

Serve at once, two or three per plate.
Cooking methods
On the stove
Rest the dough on the board; boil in a wide pot on a low gas flame so the pillows have room. Brown crumbs in a pan on medium.
On induction
Boil on 3–4 after the water first simmers at 8. Toast crumbs on 4 and stir so they do not catch.
Over an open fire
A cast-iron pan or pot over medium embers handles the sear and the simmer. Baking-only steps stay in a home oven.
