Toasting
A spice, nut, or flour is heated dry until it smells nutty.
What to do
- A dry pan, medium heat, no oil.
- Stir until the colour deepens a shade and the smell turns nutty.
- Tip it out at once. A hot pan keeps cooking after it leaves the burner.
A common slip. One minute too long, and pepper or cumin turns bitter.
