Ingredients

  • Dried white beans400 g
  • Turnip400 g
  • Smoked sausage250 g
  • Onion2 pcs
  • Bay leaf2 pcs
  • Vegeta or similar seasoning1 tbsp
  • Garlic2 cloves
  • Paprika1 tsp
  • Sunflower oil1 tbsp
  • Warm water1.5 l
  • Salt1 pinch

Instructions

    The night before, cover the dried beans with plenty of cold water and leave them 8 hours. Drain and rinse in the morning.

    Tip: Skip the soak and the beans stay chalky after 90 minutes. If you forgot overnight, a 1-hour hot soak is the emergency exit.

    Peel and chunk the turnip. Slice the onion and sausage. Crush the garlic.

    Heat the oil in a pot. Sweat the onion 4 minutes, add garlic and paprika for 20 seconds, then the drained beans, turnip, sausage, bay, Vegeta and 1.5 liters of water.

    Bring to a simmer and cook 90 minutes until a bean mashes between two fingers. Add hot water if the pot looks dry.

    Tip: Salt late. Early salt keeps skins tough. Vegeta goes in with the water; table salt waits until the beans are soft.

    Fish out the bay. Taste - sausage and Vegeta already salt the pot, so add salt only if it is shy.

    Serve in deep bowls. The pot is better the next day if you have the patience.

Cooking methods

On the stove

A heavy pot, medium flame to the first simmer, then the lowest flame that still moves the surface for 90 minutes. A diffuser helps on a fierce gas ring.

On induction

Bring to a simmer on 7, then hold beans at 3 for the long cook. Stir every 10 minutes so skins do not catch on the glass plate’s hot spot.

Over an open fire

A cast-iron pan or pot over medium embers handles the sear and the simmer. Baking-only steps stay in a home oven.
