Sweating
Onion or vegetables soften over a quiet heat, without taking colour.
What to do
- Low heat, a little fat, a pinch of salt so the water comes out.
- Stir so nothing browns.
- It is done when it is clear and sweet, still without a crust.
A common slip. When a recipe says sweat and the pan is too hot, the onion browns and the dish turns bitter.
