Glazing
A sweet-salty coat cooks onto the food until it shines and sticks.
What to do
- The food should be nearly done before the glaze goes on.
- Brush a thin layer and return it to the heat.
- Turn it until the coat is shiny and sticky, not black.
A common slip. Glaze on too early, over high heat, burns before the meat is cooked.
