Ingredients

  • Pork loin schnitzels4 pcs
  • Ham slices80 g
  • Smoked pork neck80 g
  • Gouda80 g
  • All-purpose flour50 g
  • Eggs2 pcs
  • Breadcrumbs80 g
  • Sunflower oil30 ml
  • Sour cream150 g
  • Mayonnaise80 g
  • Dijon mustard1 tbsp
  • Pickled gherkins60 g
  • Garlic1 clove
  • Lemon0.5 pcs
  • Parsley1 tbsp
  • Potatoes800 g
  • Salt1 pinch
  • Pepper1 pinch

Instructions

    Place each schnitzel between film and pound to 5 mm. Season lightly. Lay ham or smoked neck and a slice of Gouda on one half and fold, or roll and pin with a toothpick.

    Tip: Pound from the centre out. Thin edges cook before the cheese melts if you beat only the middle.

    Coat flour-egg-crumb. Press the crumb on so it does not slide in the pan.

    Peel the potatoes and cut them into 8 mm sticks. Rinse and dry well so they do not spit.

    Heat 2 cm of oil. Fry the rolls 4 minutes per side until deep gold. Keep warm in a 90°C oven.

    Tip: If cheese leaks, the heat is too high or a gap was left at the seam. Lower the flame and press the next roll tighter.

    In the same oil fry the potato sticks 12 minutes, turning, until they are gold and tender inside. Salt at once.

    For tartar, finely chop pickles, garlic and parsley. Stir into sour cream, mayonnaise, mustard and a squeeze of lemon. Salt to taste.

    Pull the toothpicks. Plate a schnitzel with a pile of sticks and a spoon of tartar.

    Serve at once - the cheese should still run when you cut.

Cooking methods

On the stove

A wide pan and a steady medium flame. The oil should shimmer, not smoke. Fry schnitzel first, then the sticks in the same fat so they pick up the pork flavour. Tartar is cold work - mix it while the first side fries.

On induction

Use the same pan or pot. Sear and fry on 7, sweat on 4–5, long braises on 2–3. Induction holds a simmer without scorching the bottom if the pot is heavy.

Over an open fire

A cast-iron pot over medium embers handles the braise and the cabbage. Fry patties or schnitzel in a skillet at the hotter edge, then move to cooler coals so crumbs do not burn.
