Ingredients

  • All-purpose flour500 g
  • Milk250 ml
  • Butter60 g
  • Eggs1 pc
  • Dried yeast7 g
  • Sugar1 tsp
  • Salt1 tsp
  • Smoked pork (ribs or ham)800 g

Instructions

    Heat the oven to 190°C.

    Warm the milk until it is bath-hot, not boiling. Stir in the yeast and sugar and wait until it foams.

    Tip: Milk hotter than a bath kills the yeast and the dough never rises. If it does not foam in 10 minutes, start the yeast again.

    Mix flour, salt, melted butter, the egg and the foamy milk. Knead 8 minutes. Cover and rise 60 minutes until doubled.

    Pat the smoked ham dry. If it has a thick skin, score it so the dough can cling.

    Roll the dough into a rectangle that will wrap the joint. Set the ham in the middle, fold and pinch every seam shut. Place seam-down on a tray.

    Tip: Pinch the seams as if you mean it. A gap lets steam out and the bread splits along the ham.

    Bake 50 minutes until the bread is deep brown and sounds hollow when you tap the bottom.

    Rest 15 minutes so the steam settles and the slices do not tear.

    Cut thick slices with a serrated knife, through bread and ham together.

    Serve warm. Mustard on the side is enough.

Cooking methods

On the stove

Warm the milk in a small pan on the lowest gas flame. The loaf is oven work at 190°C on a middle rack. If the top browns before 40 minutes, tent it with foil.

On induction

Warm milk on level 2. Bake in the oven as above. Induction cooktops do not bake this loaf - you need an oven cavity.

Over an open fire

You can let the dough rise near the fire. The bake needs an oven or a Dutch oven with coals on the lid; open flame burns the crust before the crumb sets.
