Egg-white clouds poached in milk, then the same milk thickened with yolks, sugar and vanilla into a cold custard.

Ingredients
- Egg whites4 pcs
- Egg yolks4 pcs
- Milk800 ml
- Sugar120 g
- Vanilla extract1 tsp
- Salt1 pinch

Separate the eggs carefully - any yolk in the whites and they will not peak. Beat the whites with a pinch of salt and 40 g sugar to stiff, glossy peaks.
Tip: A greasy bowl kills the foam. Wipe the bowl and beaters with a drop of lemon if you are unsure.

Heat the milk with 40 g sugar until it steams, not boils.

With two spoons shape clouds and slip them into the milk. Poach 4 minutes, turn, poach 4 more. Lift onto a plate.

Beat the yolks with the remaining 40 g sugar until pale.

Ladle hot milk into the yolks while whisking, then return everything to the pot. Cook on low 6 minutes, stirring, until the custard coats a spoon. Do not boil. Stir in vanilla.
Tip: The second the custard looks like thin cream, pull it off. Another minute on the heat and you have sweet scrambled eggs.

Pour the custard into bowls, set the clouds on top, and chill at least 1 hour.
Cooking methods
On the stove
Use a wide, shallow pot so the clouds sit in one layer. Poach on the lowest gas flame that still steams the milk. Cook the custard on that same low flame, stirring the whole time.
On induction
Heat milk on 5 until it steams, then poach clouds at 3. Cook the custard at 2–3 and do not walk away - induction holds heat after you turn it down.
Over an open fire
A pot of milk at the cooler edge of the fire works. Pull it farther from the coals for the custard so it never boils.
