Kısır
A zesty Turkish salad of fine bulgur kneaded with tomato and pepper paste, sharpened with pomegranate molasses and lemon, and packed with herbs. No cooking needed - just a soak.

Ingredients
- Fine bulgur250 g
- Warm water300 ml
- Tomato paste2 tbsp
- Ajvar (or Turkish pepper paste)2 tbsp
- Pomegranate molasses2 tbsp
- Olive oil4 tbsp
- Lemon1 pc
- Green onions3 pcs
- Parsley30 g
- Dried mint1 tsp
- Ground cumin1 tsp
- Pul biber (Turkish chili flakes)1 tsp

Instructions

Put the fine bulgur in a wide bowl and pour the hot water evenly over it. Cover the bowl.
Tip: Fine bulgur is never boiled - hot water and a lid do all the work. Coarse bulgur will not soften this way, so check the packet.

Leave it to soak and swell for 15 minutes, then uncover and fluff with a fork.

While the bulgur is still warm, knead in the tomato paste, ajvar, pomegranate molasses and olive oil until every grain is coated red.
Tip: Warm bulgur absorbs the pastes far better than cold - knead with your hand, not a spoon, like you mean it. In Turkey the pepper paste is biber salçası; ajvar is the closest jar in our shops.

Season with cumin, dried mint, pul biber and salt.

Fold in the chopped parsley, sliced spring onions and the lemon juice.

Taste - it should be tangy, gently hot and well seasoned. Serve at room temperature, ideally scooped into lettuce leaves.
Cooking methods
On the stove
No stove needed beyond boiling the kettle for the soaking water. If you have neither kettle nor microwave, heat the water in a small pot just to the boil and pour it straight over the bulgur.
On induction
Only the water needs heating: level 9 brings 300 ml to the boil in about a minute. Everything else happens in the bowl, off the heat.
Over an open fire
Perfect picnic food - boil the water in a kettle or pot over the fire, pour it over the bulgur, and the rest is mixing and kneading. No pan ever touches the flames.
