Ingredients
- Fine bulgur250 g
- Hot water300 ml
- Tomato paste2 žlica
- Ajvar (or Turkish pepper paste)2 žlica
- Pomegranate molasses2 žlica
- Olive oil4 žlica
- Lemon (juice)1 kom
- Spring onions3 kom
- Fresh parsley30 g
- Dried mint1 žličica
- Ground cumin1 žličica
- Pul biber (Turkish chili flakes)1 žličica
- Saltpo ukusu
Instructions

Put the fine bulgur in a wide bowl and pour the hot water evenly over it. Cover the bowl.

Leave it to soak and swell for 15 minutes, then uncover and fluff with a fork.

While the bulgur is still warm, knead in the tomato paste, ajvar, pomegranate molasses and olive oil until every grain is coated red.

Season with cumin, dried mint, pul biber and salt.

Fold in the chopped parsley, sliced spring onions and the lemon juice.

Taste — it should be tangy, gently hot and well seasoned. Serve at room temperature, ideally scooped into lettuce leaves.
