Peel the apples, core them, and cut into 1 cm rings. Pat dry.

Whisk flour, eggs, milk, sugar and a pinch of salt into a thin batter that coats a spoon and drips off in a sheet.
Tip: Batter thicker than cream clings in lumps and stays raw at the core. Thin it with a spoon of milk.

Heat 2 cm of oil in a wide pan until a drop of batter sizzles at once.

Dip each ring, let the extra drip, and fry 2 minutes per side until the coat is gold and the apple is soft. Do not crowd the pan.
Tip: Wet apple rings make the batter slide off. Dry them as if you mean it.

Drain on paper. Dust with powdered sugar and cinnamon while they are hot.
