Ingredients

  • All-purpose flour300 g
  • Butter150 g
  • Eggs2 pcs
  • Cottage cheese500 g
  • Sour cream150 g
  • Sugar80 g
  • Vanilla sugar8 g
  • Lemon1 pc
  • Salt1 pinch

Instructions

    Heat the oven to 180°C.

    Rub 250 g flour with cold cubed butter, a pinch of salt and 1 egg into a short dough. Press two-thirds into a 24 cm tin, including the sides. Chill the rest.

    Tip: Cold butter is the point. Warm butter turns the crust into a biscuit that will not hold a wall.

    Beat the cottage cheese with sour cream, the remaining egg, sugar, vanilla sugar, lemon zest and the leftover 50 g flour until no dry lumps remain.

    Spread the filling in the crust. Crumble the reserved dough over the top as a thin lid - gaps are fine.

    Bake 40 minutes until the lid is gold and the center only just wobbles.

    Tip: A wet wobble in the very center is fine. It sets as it cools. A dry, cracked top means you went too long.

    Rest 20 minutes so the slices hold. Serve warm or cold.

Dough and fillings are mixed on the board or in a pan on the lowest gas flame. The bake is a middle-rack oven. If the top browns early, tent with foil.

On induction

Warm milk or butter on level 2. Custards and sabayon on 3 with constant stirring. Bakes stay in the oven - an induction hob does not replace it.

Over an open fire

You can rise dough and cook fillings near the fire. The bake needs an oven or a Dutch oven with coals on the lid; open flame burns thin pastry and cookies.
