- Shredded melting cheese (gouda or edam)60 g

Spread butter evenly over one side of each bread slice, right to the edges.

Layer the cheddar and the shredded cheese between two slices, buttered sides facing out.

Heat a heavy pan over medium-low heat for a minute or two — it should feel warm, not scorching.

Lay the sandwiches in the pan and fry until the underside is deep golden, about 3–4 minutes.

Flip carefully and fry the second side until golden and the cheese is fully melted, about 3 minutes.
