The Hollywood classic from the Brown Derby: neat rows of chicken, crisp bacon, egg, avocado and blue cheese over lettuce, tied together by a sharp red wine vinaigrette.

Ingredients

  • Cooked chicken (grilled or roast)200 g
  • Bacon80 g
  • Eggs2 kom
  • Avocado1 kom
  • Blue cheese60 g
  • Lettuce1 kom
  • Cherry tomatoes150 g
  • Olive oil2 žlica
  • Red wine vinegar1 žlica
  • Dijon mustard1 žličica
  • Salt and pepperpo ukusu

Instructions

    Place the eggs in boiling water and cook for 9 minutes, then move them straight into cold water; peel and quarter.

    Fry the bacon in a dry pan over medium heat until deeply crisp, about 8 minutes, turning halfway; drain on paper towels.

    Whisk the olive oil, red wine vinegar, Dijon mustard, salt and pepper into a smooth vinaigrette.

    Chop the lettuce, halve the tomatoes, slice the chicken and cube the avocado; toss the avocado cubes right away in a spoonful of the vinaigrette.

    Spread the lettuce over a platter and arrange neat rows on top: chicken, broken bacon, eggs, avocado, tomatoes and crumbled blue cheese.

    Drizzle the remaining vinaigrette over the rows just before serving — ideally at the table.
