Chicken souvlaki with lemon potatoes
Greek taverna classic: chicken skewers in an oregano-lemon marinade, grilled hot and fast, next to potatoes that roast in lemony stock until golden on the edges and soft in the middle.

Ingredients
- Chicken breast600 g
- Potatoes800 g
- Lemon2 pcs
- Olive oil100 ml
- Garlic3 cloves
- Oregano2 tsp
- Vegetable stock200 ml
- Salt1 pinch

Heat the oven to 200 °C.

Whisk the marinade: half the olive oil, juice and zest of one lemon, crushed garlic, oregano, salt and pepper.

Cut the chicken into 3 cm cubes, coat with the marinade and refrigerate for 1 hour.
Tip: At least 30 minutes, at most 4 hours - leave it longer and the lemon starts to break down the meat and the texture turns mealy.

Cut the potatoes into wedges and toss them in a baking dish with the rest of the oil, the juice of the second lemon, a pinch of oregano and the stock.

Roast the potatoes for 45 minutes, turning once halfway, until the liquid is absorbed and the edges are golden.

Thread the chicken onto skewers, packing the cubes snugly; if using wooden skewers, soak them in water first.

Heat a grill pan until properly hot and grill the skewers on the first side for 4 minutes without moving them.
Tip: Do not crowd the pan and do not fiddle with the skewers - they need to sit still to char instead of steaming.

Turn and grill the other side another 4 minutes, giving a quarter-turn at the end, until charred outside and cooked through.

Rest the skewers for 3 minutes, squeeze lemon over and serve on top of the potatoes.
Cooking methods
On the stove
A cast-iron grill pan over high heat is the home version of a taverna grill - get it smoking-hot before the first skewer lands, and open a window. The potatoes belong in the oven either way.
On induction
Preheat the grill pan on power 8–9 of 9 for a good 3–4 minutes; induction gets pans hot fast but the pan mass still needs time. Drop to 7 once the skewers are on so the garlic in the marinade does not burn.
Over an open fire
This is where souvlaki was born: grill the skewers directly over glowing embers, 3–4 minutes per side. The potatoes can roast beside the fire in a covered Dutch oven with the stock, about an hour with embers on the lid.
