Ingredients

  • Chicken breast250 g
  • Olive oil1 tbsp
  • Greek yogurt100 g
  • Parmesan20 g
  • Dijon mustard1 tsp
  • Lemon1/2 pc
  • Romaine lettuce1/2 pc
  • Flour tortillas2 pcs
  • Salt1 pinch
  • Pepper1 pinch

Instructions

  1. 1

Pat the chicken dry. Salt and pepper both sides.

  2. 2

Heat the olive oil in a pan over medium-high heat. Cook the chicken 6 minutes without moving, flip, then 6 more minutes until the thickest part is 75 °C or the juices run clear.

  3. 3

Rest the chicken on a board for 5 minutes so it stays juicy and does not wilt the lettuce. Meanwhile stir the yogurt, mustard, juice of half the lemon, grated parmesan and plenty of black pepper into a dressing.

Tip: Warm chicken on cold lettuce turns it limp. The 5-minute rest cools it just enough.

  4. 4

Slice or shred the chicken into bite-size pieces. Slice the romaine into thin ribbons.

  5. 5

Toss the chicken and romaine through the dressing until everything is coated.

  6. 6

Warm each tortilla 20 seconds per side in a dry pan if you want them softer. Divide the filling, tuck in the sides and roll them up tightly.

Tip: Don't overfill - a wrap that's 80% full rolls tight; a stuffed one bursts open.

  7. 7

Let the wraps rest seam-side down for 5 minutes so they hold their shape, then halve and serve.

Cooking methods

On the stove

Medium-high for the chicken. A quick 20–30 seconds per side in a dry pan after that makes tortillas softer and easier to roll. Warm them before filling, not after.

On induction

Level 7 for the chicken. To soften tortillas, 20 seconds per side in a dry pan on 7 - they roll much more willingly when warm.

Over an open fire

Cook the chicken in a pan on a grate over calm embers. A few seconds of tortilla-warming on the grate adds char spots - keep the filling cool.
