Ingredients
- All-purpose flour200 g

- Milk400 ml
- Cottage cheese400 g
- Sour cream200 g
- Sugar60 g
- Vanilla sugar8 g

Instructions

Heat the oven to 190°C.

Whisk flour, 2 eggs, 300 ml milk, a pinch of salt and 20 g sugar into a thin batter.

Butter a pan and fry thin pancakes, about 1 minute per side, until they spot gold. Stack under a cloth.
Tip: The first pancake is the tester. If it tears, the pan is not hot enough.

Mix the cottage cheese with 40 g sugar, vanilla sugar and 2 tablespoons of the sour cream.

Spread each pancake, roll, and lay them snug in a buttered baking dish. Beat the remaining egg with the rest of the sour cream and 100 ml milk and pour over.

Bake 25 minutes until the pour is set and the top is gold.
Tip: If the top browns before 20 minutes, drop the oven to 180°C. The pour in the middle still needs time.

Rest 5 minutes so the slices hold. Serve warm.

Dough and fillings are mixed on the board or in a pan on the lowest gas flame. The bake is a middle-rack oven. If the top browns early, tent with foil.
On induction
Warm milk or butter on level 2. Custards and sabayon on 3 with constant stirring. Bakes stay in the oven - an induction hob does not replace it.
Over an open fire
You can rise dough and cook fillings near the fire. The bake needs an oven or a Dutch oven with coals on the lid; open flame burns thin pastry and cookies.
